Cork is a protective tissue with dead suberin rich cells that forms thick and waterproof covering of older stem and root. Suberin is a waterproofing waxy substance which restricts water movement. Presence of suberin in dead cells of cork and absence of intercellular spaces makes the cells impermeable to water and gases thereby protecting the underlying tissues from desiccation, mechanical injury and pathogenic infection.
